Stir fry bitter melon (Goya chanpuru)

Goya chanpuru is an Okinawa popular dish consists of bitter melon, sausage or luncheon meat, egg, tofu and vegetables as liking. Stir fry all the ingredients and simply seasoning with soy sauce.



Ingredients (2 servings)
1 medium bitter melon
1/2 pack of firm tofu
1/2 can of luncheon meat
1 egg
2cm carrot
1 tbs oil
1/4 head of onion
1 tbs soy sauce
little pepper
little katsuobushi dried bonito flakes (optional)

1. Halve the bitter melon and de-seed
2. Cut them to 1cm size and massage with one teaspoon of salt. (For less bitterness squeeze out the juice twice)



3. Bring water to boil, add slice bitter melon boil it for 1 minute, drain water and set aside.

4. Meanwhile prepare the vegetables and cut them to bite size.

5. Heat the frying pan with oil and grill the tofu until becoming golden brown and take them out. Add onion and luncheon meat stir fry them for a while and add the remaining ingredients. Keep string, when everything is cooked, add the egg and soy sauce.
6. Adjust the taste and sprinkle with some pepper and the Goya Chanpuru is ready to serve. Recommend to serve with hot rice.
