Edamame Soup


Edamame Soup is a hearty soup with full fragrant of green soybean . The soup is extremely healthy too as I use soy milk instead of fresh cream and milk, exclude onion and soup mixes to make the soup a bit lighter. The richness, silky smooth puree and nice fragrant from the soybean really boost the appetite up. Edamame also gave lovely and fresh light green color to the soup which is very beautiful. It can be served hot or chilled. 


Ingredients (2 servings)

150g Cooked Edamame
200ml soy milk
A pinch of salt
A dash of pepper




1. Boil edamame, cool it and peel out the skin.

2. After peeling Edamame and soy milk.

3. Blend it well. Add salt and pepper, adjust the taste, chill it in the fridge at least for 30 minutes before serving. Heat it up for hot serving.
