Mustard Green Soup (မုန္ညွင္းဟင္းရည္)


Mustard green soup is a simple and healthy soup that Shan people enjoy throughout the year. Shan people use a lot of mustard green in cooking recipe such as pickle, stir fry, as a condiment, or simply make a soup. Cooking this soup is quite simple, it only takes time to simmer the broth but it's definitely worth waiting for.
The sweetness of the broth from ribs, soften meat and mustard green soup perfectly fits with a bowl of rice. This soup can be served with any kind of other dish. Traditional Shan people will serve with saute tofu, pounded chillies, and some meat dish. 

Ingredients ( 2 servings)
1 bunch of mustard green
300g pork ribs (or pork bone with meat)
1 slice of fresh ginger
2 cloves of garlic
1 teaspoon of salt
Little pepper
1 liter of water

Ingredients; Pork ribs, mustard green, garlic and ginger.

1. Cut the mustard green, wash and set aside.

2. Bring water to boil, add pork ribs (wash well), garlic, slice ginger and salt. Simmer it in a low heat at least 30 minutes or until the meat becoming very tender.

3. Add the mustard green and let it simmer for about 10 minutes or tender as your taste. Adjust the taste and season with a little pepper before serving. Take the meat out from the bone before serving or serve as its. 

Ready to serve mustard green soup with rice and saute tofu.
